Icebox Cakes

Cookies and Cream Icebox Cake


• 2 packages chocolate chip cookies

• 2 packages cream cheese, softened

• 1 cup powdered sugar

• 2 teaspoons vanilla extract

• 4 cups heavy whipping cream


• Beat the softened cream cheese with electric mixer until creamy

• Add powdered sugar, vanilla extract to cream cheese mix ad combine

• Add in whipping cream and mix until you see peaks

• Using a baking dish of your choice in size, spread cream mixture onto the bottom of the dish then add a layer of cookies

• Continue to layer cream mix and cookies until you fill the dish, finishing with a layer of cream

• Top with cookie crumbles

• Refrigerate overnight

• TIP: add chocolate chip cookies to heavy cream for 30 minutes and strain out cookies to infuse the cream with a stronger cookie flavor

Classic Nabisco Chocolate Wafer Icebox Cake

• Uses only whipped cream (no cream cheese)

• Use Oreo Thins in lieu of now discontinued chocolate wafers

• Follow layering and refrigerating instructions noted in above recipe
