Stove Top Directions:

Combine sugar, brown sugar, cinnamon, nutmeg, cloves and salt in bowl. Stir and set aside.

In large bowl combine egg white, bourbon and honey. Whisk together until frothy. (I like a small hand-held, battery-operated whisk)

Add pecans and egg white mixture to large pan.

When combined and thoroughly coated, add sugar mixture and combine.

Cook over low heat stirring constantly until the mixture starts to thicken. Turn heat to medium and continue stirring until crystalized, breaking up chunks.

Pour pecans onto baking sheet lined with parchment paper and cool.

Oven Directions:

Preheat oven to 250 degrees. Line baking sheet with parchment paper.

After combining sugars and egg white/pecan mixture as above, pour the pecans onto prepared baking sheet.

Bake for 1 hour and 15 minutes, stirring every 20 minutes or so.

The pecans will be sticky until they cool.
