An east coast spin on the classic BLT swaps out bacon for salty and crispy pork roll or Taylor Ham (argue about it in the comments) with some heirloom tomatoes, and tarragon mayo, on toasted milk bread! 

Ingredients

Ingredients:

5 slices of Pork Roll (or Taylor Ham)

2 heirloom tomatoes

2 slices of white bread

1/2 cup mayo

2 tbsp fresh tarragon

1 tsp lemon juice

Butter lettuce

salt and pepper

Preparation

Tarragon Mayo

Combine mayo, tarragon, and lemon juice and blend with an immersion blender.

Method

Slice pork roll into 1/2 inch slices.  Cut four small slits into each side of the pork so that it doesn't cup up when frying. Fry for 3 minutes on each side until crispy and set on a paper towel to drain excess grease. Slice your tomatoes and season with salt and pepper. Wash and dry your butter lettuce. Toast your bread in butter until golden.

Build

Spread mayo liberally on each slice of toast.  Layer your tomatoes, followed by pork roll, and then lettuce. Top with a second slice of bread and cut diagonally.
