The Giannis

This week I'm back partnering with my pals at Chicago Game and Gourmet to feature their gyros inspired lamb and beef sausage with my latest sandwich creation, “The Giannis”.

That sausage gets split and seared and is stopped with homemade tzatziki, cherry tomato and greek olive relish, pickled red onions, French fries, feta, and parsley on a pita and it's a GREEK FREAK of a sandwich.

Ingredients

Lamb Sausage

1 cup greek yogurt

1/2 english cucumber

1/2 cup minced dill

2 tbsp extra virgin olive oil

1 lemon (juice and zest)

2 cloves of minced garlic

salt and pepper to taste

1/2 cup cherry tomatoes 

1/2 cup greek olive medley

2 tsp minced parsley

1 tsp sherry vinegar

French fries (fresh or frozen)

1/2 cup greek feta

pickled red onions

Greek style pita (pocketless)

Preparation

Tzatziki:

Grate english cucumber and season with salt to draw out moisture.  Place in a kitchen towel, squeezing out as much liquid as possible.  In a small bowl, mix greek yogurt with cucumber, dill, garlic, lemon juice, lemon zest, olive oil, and season with salt and pepper to taste.

Cherry tomato greek olive relish:

Roughly chop cherry tomatoes and olives.  Mix with parsley, olive oil, sherry vinegar, and parsley.  Season with salt to taste.

Split sausage and butterfly.  Sear in a hot skillet until deeply caramelized, about 2 minutes per side.  Warm pit in a dry skillet

To build:

Spread tzatziki on your pita.  Lay your sausage in the center and top with cherry tomato olive relish, pickled red onions, french fries, crumbled feta, and parsley.
