The Gator Robb
The Gator Robb is an alligator sausage jibarito inspired by the legend of Frank Robb aka Alligator Rob and Humboldt Park's favorite gator, Chance the Snapper. Back in 2019, an alligator was found swimming in the Humboldt Park lagoon. After the city struggled to trap it, Robb was brought in from Florida to wrangle the Gator and, in the process, wrangled our hearts
The sandwich fuses cajun cooking with Humboldt Park's Puerto Rican Community to make one tasty sandwich. Fried plantains are topped with seared Crescent City Foods alligator and pork sausage, American cheese, cajun garlic mayo, lettuce, and tomato.
Ingredients
1 Green plantain
1 Alligator sausage link
1/2 cup mayo
1 tsp cajun seasoning
1/2 head of roasted garlic
Tomato
Romaine lettuce
Deli American cheese
1 cup frying oil
salt and pepper
Preparation
Cut the ends off of the plantain and make a thin slit across each side. Microwave for four minutes. Once cooled remove skin and slice in half. Place in between parchment or wax paper and smash flat using a tortilla press or heavy bottom pot. Repeat with the other half and shallow fry at 350F until golden on each side about 4 mins. Season with salt and set aside.
Butterfly your sausage and cut it in half. Sear in a lightly oiled pan for two minutes on each side until deeply caramelized. Set aside. Blend together mayo, cajun seasoning, and roasted garlic with an immersion blender or food processor. Season with salt.

To build:
Spread mayo on plantain. Top with your gator sausage, a slice of American cheese, tomato, and lettuce. Spread mayo on the second plantain and press together. Slice down the middle.
