The Chick and Morty
Sometimes a cold sandwich rocks. This one rocks. Ramp pesto mayo, chicken cutlet, mortadella, fresh mozz, lemon dressed arugula, and a spicy cherry pepper relish on a sesame seed hoagie roll. Make this your new go to sando!
Ingredients
1/4 cup ramp pesto or sub any pesto
1/4 cup mayo
1 Chicken breast pounded
1 Cup AP flour
1 Egg
1 Cup Italian breadcrumbs
4 oz thinly sliced mortadella (4-5 slices)
1/4 neutral frying oil
salt and pepper
1/3 cup of arugula
1 small lemon
1/4 cup cherry pepper relish
3-4 slices of fresh mozzarella
1 seeded hoagie or sub roll
Ramp Pesto Mayo
Simply mix mayo and pesto and set aside.
Chicken Cutlet:
1 Chicken breast pounded
1 Cup AP flour
1 Egg
1 Cup Italian breadcrumbs
1/4 neutral frying oil
salt and pepper
Preparation
Simply mix mayo and pesto and set aside
Season flour with salt and pepper. Coat chicken in flour, then egg, then breadcrumbs and shallow fry for 3 minutes per side until golden and cooked through. Set aside to cool to room temp.
Toss arugula in lemon juice and season with salt and pepper.
Split your roll, leaving a hinge in place. Sandwich build as follows. Ramp pesto mayo, chicken cutlet, mortadella, fresh mozz, lemon dressed arugula, and then cherry pepper. relish. Wrap in parchment and cut down the middle.
