The Chickago Dog

A hot dog is a hot dog but a chicken tender dog is a sandwich!

A crispy spin on the classic Chicago hot dog, that’s of course, dragged through the garden.


Ingredients

Ingredients:

Hot dog spice blend:

1 tsp each garlic powder, onion powder, mustard powder, smoked paprika, celery salt

1/2 tsp msg

Wet Brine:

1 cup of buttermilk

1/4 cup pickle juice

1 tsp salt

Half of your hot dog spice blend

Chicken Tenders:

Chicken tenderloins

1 cup AP flour

Neutral frying oil

Toppings:

Yellow mustard

1/2 of small onion, diced

Neon relish

Roma tomato sliced into quarter wedges

Sport peppers

Celery salt

Dill pickle spear

Steamed poppyseed hot dog bun

Preparation

Method

Mix together brine ingredients and place tanders in brine for anywhere from 1-24 hours.  Mix AP flour with remaining hot dog spice blend and combine.  Remove chicken from brine and dredge in flour mixture.  Fry in 350F oil for 3-4 minutes until golden and cooked through.  Remove from oil and sprinkle with celery salt.

To build

Place chicken in bun.  Top with yellow mustard, relish, onion, tomato, sport peppers, pickle, and sprinkle with more celery salt.
