The Billy Breakfast

Growing up, my dad worked nights and in the morning would stop at McDonald's and bring me their “Big Breakfast”, which was a biscuit, sausage patty, scrambled eggs, and a hash brown. I would always make a lil sandwich out of the biscuit, eggs, sausage, and grape jelly. I decided to make a better grown up version of that sandwich.


“Billy's Breakfast” is a pork sausage patty topped with folded scrambled eggs, chili fig jam, tons of grated parmesan, and arugula on a toasted sesame seed brioche bun.


You'll be saying, “I'm loving it”

Ingredients

1/4 oz bulk breakfast sausage

1/4 cup shredded parmesan 

2 eggs

Arugula

Sesame seed brioche bun

1 tbsp Divina chili fig spread

salt and pepper

Preparation

Method:

Form sausage into a patty about an inch larger than your bun.  Preheat a skillet and sear on both sides until deeply caramelized about 4 minutes in total.  Set aside.  In a small bowl, season eggs with salt and pepper and scramble. Add to a lightly oiled non-stick skillet and as the eggs begin to set, fold in each side halfway until they meet in the center then fold the opposite end over to form your folded egg. Lightly toast your buns in a dry pan until golden brown.

To build:

Spread chili fig spread on both buns.  Top bottom bun with your sausage, folded egg, grated parm, arugula, and then your top bun
