Pumpkin Pie Granola

1/2 cups pumpkin seeds, raw
1/2 cups coconut, unsweetened, shredded or chips
1 1⁄2 tsps kosher salt
1/3 cups pumpkin
1/2 cups olive oil
1/2 cups maple syrup, or date syrup
1/3 cups honey
1 tsps vanilla extract
3 tsps cinnamon
1 tsps dried ginger
1/2 tsps allspice
1/2 tsps cloves
1/2 tsps nutmeg
1/2 tsps cardamom
