Chef Ashleigh Fleming is the Executive Chef of Blue Jay Bistro, which has been a force of revitalization for the town of Littleton, North Carolina. She has brought a modern, elevated menu to Littleton, as well as showcasing the best of North Carolina through locally and regionally sourced ingredients. King Trumpet Mushrooms are in season year-round, and in this livestream Ashleigh shows us how she makes her mushroom “scallops” served over celery root puree and topped in red cabbage slaw, candied shallots, chipotle vinaigrette -- a dish she created with the help of Malcolm Miller, her Sous Chef. Kittch's Katie Quinn moderates, interviewing Ashleigh not just about the story behind the dish, but also how she helped build a hospitality business that has been key in regenerating the town.
